In honor of Memorial Day weekend coming up, Nate and I have been coming up with fun summer ideas and activities! Our first? Making our own popsicles! What’s better than a frozen treat? Hmmm…a frozen treat made with alcohol, perhaps?

To make these boozy beauties, it was pretty simple. Just 5 ingredients and you’ll be licking your dessert out by the pool just in time for the long weekend!

Ingredients

4 oz fresh lemon juice

1 tbsp sugar

Fresh lemon zest

5 oz Prosecco

1/4 oz (each popsicle) grenadine

(Makes four 2.5 oz popsicles)

Got everything? Okay, let’s get started! Start by dissolving your sugar in the fresh lemon juice (you can also use simple syrup if you’re impatient).

Next stir in the Prosecco and then evenly distribute the mix in your popsicle molds. There should be about a 1/4 oz worth of space left so fill that gap with your grenadine. This will give our frozen treat its wonderful color!

After that sprinkle in a little fresh lemon zest for each mold, put the tops on, and put them in the freezer.

Now comes the hard part…waiting!! Ours took over night to freeze due to the alcohol content.

If you want ones that will freeze faster and hold up better once frozen then consider cutting the Prosecco volume with some water. You could add more lemon juice instead, but these babies will already be pretty tart so be careful!

Once they’re frozen, take them out and enjoy! We had so much fun making this one (and yes, even more fun eating them) that we decided we’re going to make a sweet summer popsicle series (with choice cocktail add-ins included, of course)!
