Delicious Shrimp Pesto Pasta: Step Up Your Weekday Meal Game

Hey everyone! It’s Nate with another recipe…hopefully it will help you soak up all those drinks I’ve been pushing. Missy and I are always in need of a quick weekday meal idea that is simple and delicious. What can I say, long and complicated cooking endeavours really cut into doing one of our favorite things…absolutely nothing. It just no fun after work to come home and feel like you’re working over-time in the kitchen. Don’t worry, Nate is here for you…you do have bourbon in your house, right? Good, then pour yourself a drink and get ready to learn my way of making a simple and delicious shrimp pesto pasta!

~Ingredients~

Pesto Sauce

2 cups Fresh Basil

1/4 cup Sliced Almonds

2 Cloves Garlic

1/2 cup Italian Pecorino Romano Cheese

1/2 cup Extra-Virgin Olive Oil

1/4 of a Lemon’s Juice

1/2 tbs Sugar

Salt and Pepper to Taste

Pasta

Box of Angel Hair Pasta

1 lb Raw Shrimp (peeled)

Cherry Tomatoes (However many you want)

1/2 tbs Garlic Powder

1/4 cup Extra-Virgin Olive Oil

1/2 tsp Paprika

1/2 tsp Dried Parsley

Salt and Pepper to Taste

Alright! Let’s do this!

Start by getting the shrimp marinating with everything from the garlic powder down. The colors and flavors work so well with the shrimp! We will let these sit until the very end…the shrimp cook suuuper fast and will ruin the dish if they are under cooked or cold. Get the pot of water heating up on the stove and let’s work on the sauce!

Toast up the almonds in a pan over medium heat. Stir often…like don’t really let them sit around. These little puppies will burn and make your sauce a little too…smokey. Once they’re nice and toasted, blend them together with the rest of the ingredients underĀ sauce. We have one of those Magic Bullets and it works really well for this! Aaaand that’s it. Really. That’s the whole sauce. Simple and delicious and you don’t have to cook it all day like a homemade marinara sauce. Cut all the tomatoes in half and let’s cook those shrimp!

Get a pan big enough to fit all the shrimp over medium-high heat and throw those bad boys in there. You can start cooking the pasta at the same time too…both take only a few minutes to fully cook. Stir the shrimp occasionally to cook evenly. Now get yourself a big bowl and get ready to put it all together!

Would you just look at that?! Toss the pasta with the shrimp, pesto sauce, and tomatoes. Add a little more of that cheese on top, and you’re ready to eat! If you have everything organized you can get this meal done in 30 minutes, leaving you with plenty of time to do the things you really want to do after work (I’m picturing a lot of Netflix…maybe just sitting around with a glass of wine petting your dog too hard). This size serves about 4 people [in my experience] so feel free to adjust the size for your needs, and as always have fun & enjoy!
